Today is the last day of my fifth week of raw, and only a couple of off-limits foods am I craving. "Craving" may be too strong a word, but a hamburger and a barbecued rib do sound good. If I am quiet, I can actually hear them calling my name.
This week I ran into a new book on Amazon full of vegetarian burger recipes. Take a look here at the cover of Veggie Burgers Every Which Way: Fresh, Flavorful and Healthy Vegan and Vegetarian Burgers-Plus Toppings, Sides, Buns and More and see if those photos don't look tasty and inviting. I e-mailed the book's author Lukas Volger to see if any of the recipes are raw, and he responded that none are. I suppose some could be modified? Three of his recipes are linked to here. Any ideas about how to raw-ify them?
In the meanwhile, I hungrily scoured the Internet for alternative raw food burger
recipes. I found a few, and now have to decide only two things. First, which of these "burgers" to "cook" . . .
Nut Burger with Marinated Mushrooms and Fennel looks easy to prepare, but takes many hours of dehydrating. On the other hand, Jalapeno Burgers require no deyhdration; that step is optional. The JB recipe:
Jalapeno Burgers

1 jalapeño pepper, finely chopped
1/2 onion, finely chopped
1 cup walnuts, soaked for 4 hours
1/4 cup sun-dried tomatoes, soaked until very soft, reserve 1/8 cup soaking water
1 tablespoon Nama Shoyu
1 teaspoon Hamburger seasonings
1 teaspoon sea salt
1/2 teaspoon black pepper
In a food processor, combine walnuts, sun-dried tomatoes and soaking water until you achieve a meat consistency. Remove from processor.
In a mixing bowl, lightly mix together walnut meat, onions, jalapeno peppers, Nama Shoyu, salt and pepper.
Shape into 6 patties. Serve.
Optional: Dehydrate at 115 degrees for 1 hour.
I choose the second recipe!
My next decision: I need an easy bun recipe, and will begin my search. Maybe Alissa Cohen's Burger Buns? (Preorder Cohen's new book here.) Do you have any suggestions for raw burger buns?
Fortunately, in looking for condiments, I see a raw mayo recipe is already taken care of by The Rawtarian. She has also provided a somewhat generic raw burger recipe.
I guess I will have completed all this searching and made my final decisions for the perfect burger, bun, and condiments by Labor Day. But I am hoping that first raw burger crosses my lips before September 6. You will see the photos here whenever it happens.
